Back in 1902, when our current day Enterprise passenger coach was built for the Missouri Kansas and Texas Railroad, few people would have dared to imagine that the car would still be in use 123 years later. The car was born at a time when wooden railcars were still found on the nation’s railroads, and our Enterprise car likely made trips across Eastern Kansas, Missouri, Oklahoma, and Texas. The MKT, or “Katy” as it was commonly known, once had a dining operation featuring great food a quality service. And while our Enterprise car was not a dining car, it still represents the heyday of train travel when the railroad’s Katy Flyer passenger train once operated on the MKT’s extensive network of rails. On Saturday, July 20, the A&SV’s “Dining Car Heritage Series” presents a tribute to the Katy railroad’s once-heralded Katy Flyer, serving food featured in the company’s cookbooks. Lucinda’s Katering of Abilene is recreating Katy Chicken Pie, accompanied by a lettuce edge salad, mashed potatoes, and corn. For dessert, Lucinda is preparing peach cobbler made from the MKT’s special recipe. Iced tea and water accompany the meal. Our two-hour air-conditioned ride through the Smoky Hill Rover Valley leaves our 1887 Rock Island Depot at 6:00 p.m. and makes a stop at the Hoffman Mill and Country Store in Enterprise, Kansas.
